I have a replacement lid switch, and the connector is not the same. Can I splice the old connector onto the new switch?
If do, there are two gray wires and one green En. Does it matter which gray I splice to which?

The short answer is yes. Actually that's the long answer too. We do this all the time.
It doesn't not matter which gray is hooked to each gray as long as the green (ground) is to green.
