How do I get the timer knob and timer dial off of the timers threaded shaft?

If it doesn't screw off (normal handed threads), try GENTLY prying the center out of the knob to expose a retaining nut.

All I see is the threaded shaft of the timer. There is no retaining nut. It appears to me that it is either pressed on or left hand threaded on?

It isn't left threaded. Otherwise it would come off every time you set a time. Try a little WD-40.
