The normal reading should be from about 12KOhms at room temperature to about 32.5KOhms at 32F

If the readings are within range then the control board is very questionable.

Make sure the oven vent (under the control panel) is clean and not blocked.
Remove the power from the range and pull it out of the wall. Remove the rear panel and carefully check the oven vent tube.
