I had a leaky water dispenser that ended up stopping working so I thought no brainer and replaced the water inlet valve. Still had leak. Had a saddle valve so I thought I might have low water pressure so I installed a shutoff. Water dispenser is still dripping. Thought maybe my water filter could be plugged so I replaced it and water dispenser still drips. I can't find any leaks anywhere. What should I do next? Thanks.

If the water pressure at the dispenser is low, you might have a partially frozen plastic line in the door, this is the only thing that makes sense. Try warming it with a hair dryer.

I had the fridge unplugged for a full day defrosting it. So I really doubt that is the problem. Also, there is good flow coming out of the water dispenser. Any other ideas? Thanks.

The drip may be from frozen insulation. If so, it will still drip when the water is turned off.

Check to see if the door assembly is closed completely, I don't know how much of a drip you have but the condensation on an open/stuck door can be substantial. If that is the problem, check out the ice door kit AP4009082 especially the solonoid.
