Defrost Timer or Cold Control to solve problem?

I received some vey helpful advice from Gene re my problem about both my defrost timer and cold control both having possibl gone bad as the refrig sat for 5 years without being used, but am still a little confused....so -
If a defrost timer is working correctly, how often should I hear the refrig stop running?
And when it does stop, does that always mean the defrost heater is coming on?
I ask, b/c the only time I hear the refrig turn off is when I turn the defrost timer to off using the screwdriver technique, in order to stop it from contantly running, and the heater does come on.
Perhaps I'm wrong in thinking that the refrig is supposed to only stop running when the defrost timer comes on???
Or are they 2 separate functions and the cold control controls the refrigerator running (And in my case it may be bad b/c the refrig always runs unless I the turn defrost timer until it snaps and the heater comes on)?
And when I do manually turn the defrost timer until it snaps and the heater comes on, how long should it take before the heater turns off and
in my case, the refrig start running again?
