Whirlpool working fine until the 6th day

I have an 11 year old Whirlpool side-by-side. I have a problem with the freezer going into defrost mode and staying there for several hours until the ice melts. I have replaced the THERMISTOR and the DEFROST CONTROL CIRCUIT board. I have been monitoring the temperature in the freezer with a device I built that dumps the temperature every minute to a log file on a computer. What I see is a regular pattern of -10F with spikes to +25F for a few minutes every 8 hours exactly. Since it doesn't get above 32F everything is fine and I'm not seeing any frost build up. Everything seems to work fine. However, on the sixth day the temperature spikes up to 35F to 40F for eight hours and everything obviously melts. This 6 day cycle seems to occur like clock work as well as the eight hour cycles I mentioned previously. I am at a loss as to what to do next. Any ideas?
Update: After 6 days I must have cycled the power each time and reset something because this last time I just left it run and the temperature in the freezer remained above 32F until I unplugged it and plugged it back in. What else could this be besides the thermistor or the defrost control board? I even tried a second defrost control board thinking the first new one may have been defective. Is there any special procedure that must be performed after installing the defrost control board to reset anything??
