I bought a commercial fridge off craiglist. i am rel pleased with it but have noticed wide temp fluctuations. i bought a remote alarm and it records high & low as well as current. In the last two days low temp was 24, and high was 47. any ideas as to what it could be? thanks in advance

You will have to choose a unit from the Matching Model Numbers section as you seem to be missing the last two digits in the model number.

How often does this happen?

If it is once in about 12 hours of compressor run time then it could be that the defrost thermostat is not opening when all the ice haas melted off the defrost coils.

If it is more often then it may be the control thermostat is bad.

I am assuming everything else runs normally.

the model number is FCGM201RFB2
are the defrost thermostat and/or control thermostat fairly easy repairs that I could do?

Neither one should be that difficult.
Take a look at the parts breakdowns.

Just be sure to unplug the unit when working on it.

Yes that should be the temperature control thermostat.

The only concern I have is tat I do not know what item 159 in section 05 is.
It list it as a dial but I cannot find any tech info as to what it does.

159 is the analog thermometer. it seems to be fine. the temp fluctuation is much more often than every 12 hours. more like every 2.
the cold control unit AP5949481 seems pretty straightforward. i will try it first

I replace the cold control unit AP5949481 and defrost timer. does not seem to help.
a concern I have is the cold control unit I bought was $16. when I look elsewhere the oem from the unit was 216660600 which is anywhere from $100 to $150. AP5949481 looked a little different from what I had. is 216660600 still a viable number?

216660600 is still a valid number if you can find one.
The AP number is just a replacement part from AppliancePartsPros
The below is what comes up.
Part Number 5304495001 (AP5949481) replaces 216660600.

One thing to be aware of is if the condenser/compressor fan is on but the compressor is not on then the problem is not with the temperature control.
The two parts are usually wired in parallel so when one is on the other should be on.
