The fridge works fine. Doesn't run loud. Then one day you open the fridge and the only thing that works are the lights. I turn the thermostat to see if that will make it work but nothing. No clicking. Let it sit for a bit and it comes back to life. Thermostat will now click. Could it be as simple as the thermostat? I also vacuumed the front coils as it was packed with dust. Should I still look at replacing thermostat?

The most likely culprit is the thermostat.

Could also be that it is getting stuck in a defrost cycle.
When it happens again turn the defrost timer cam if it starts up then I would replace the timer.

Could be that there is nothing wrong with the unit as you said that it runs fine.
So unless you have a problem with the temperatures the unit is probably OK.
Every 8 hours or so the unit will go into a defrost cycle, this will last for about half an hour and the fans and compressor will not run.
