Freezer was not getting cold. unplugged it for about 2 weeks. plugged it back up, would not come on. bypassed the temperature control switch, the compressor and fan started, let it run for about an hour, it got cool but not cold. The compressor got hot to the touch. My question is when I bypassed the temperature control switch which temperature is it in? The coldest or warmest? Could everything else be ok and it's just the switch is not in the coldest setting? Or should it still freeze with the temperature switch bypassed regardless?

It should freeze.

If the compressor is on it should get cold. You can usually hear it but should also be able to feel it vibrating.
Also make sure that the evaporator/freezer fan is running.

I am assuming the compressor is on continuously except when it goes into a defrost cycle.
It sounds like you have a sealed system problem.

Remove the cover in the freezer so you can inspect the evaporator coils.
If there is just frost in one area (usually where the freon enters the coils) or no frost then it is a sealed system problem.
Be sure that the compressor has run for at least an hour, otherwise you may come to the wrong conclusion if you check it shortly after or during a defrost cycle.

This will be an expensive repair as you need a pro. Often it makes more sense to put the dollars towards a new unit.
