Can anyone tell me what the difference is between these two parts labeled defrost themostat in my fridge? What do they do differently?

WR50X10071

I have both located in my freezer, attached side-by-side onto the copper tubing.

Two different cut-out temps. The temp is printed on the side of them.

is a 'Hi Limit" or safety thermostat. If for some reason the heater remains active (stuck thermostat, timer circuit, shorted wire, etc.) If or when the heater area reaches a temperature of approximately 140 dgrs. the thermostat opens and removes power to the heater. This process should reduce if not eliminate any damage to the refrigerator or food product.

is a defrost or "regulating" thermostat. When the timer advances into a defrost cycle, the heater is activated, as long as the heater and evaporator coils are frosted, the thermostat remains closed, when the temperature in the heater area reaches approximately 45 to 50 dgrs, the thermostat "opens" and removes power to the heater, it takes approximately 10 to 12 minutes for the thermostat to "open". When the timer advances into the cooling mode, as the coils develop frost, the thermostat "closes" and the process begins again.
