My mom's fridge won't stop running, she hasn't blocked any vents or over filled the fridge. Sometimes the containers and veggies will have condensation on them. Can someone please help me?

Are the front (kick plate) and rear cover vents clean.

Have you cleaned the condenser coils?

If the unit has a condenser/compressor fan, is it running.

Since you mentioned condensation in the fresh food side you may want to check the door seal.
Make sure it is clean.
Take a 2 inch strip of paper and place it between the seal and the door, then pull it out to see how well it seals. Work your way around the door.
If it is not sealing correctly could be a seal or a hinge (cam) problem.
Check that the hinge side seal is not grabbing and twisting when closing. If it is then a light coating of lithium grease or vaseline should solve this.

Thank you so much! She vacuums the vents frequently but she isn't sure where the condenser coils are located. She unplugged the fridge for about 10mins, when she plugged it back in the fridge only ran for about 2hrs (improvement from 4hrs). There is also a large piece of cardboard on the back of the fridge with vent holes near the bottom, is this something that should be taken off or is it supposed to be there? Thank you

Yes it is supposed to be there. It is part of the air flow path of the unit.
If you take it off you will see the compressor, it's fan if it has one and the condenser coils.
