I don't know anything about the history of this fridge...
When I plug in the fridge the compressor start then after just few seconds make a noise and the compressor stops. The fan keep running.
I bought from this website and replaced the start relay and overload but nothing changed.

If I unplug it and plug it in again the compressor won't start, I have to leave it unplugged for few minutes to cool down... don't know if it helps.

If you leave it plugged in and it re-starts after a few minutes, the compressor is drawing excessive current and the klixon overload is shutting it down. It might be worth it to replace the compressor depending on local rates.

you are right, that's exactly what it does...
can I test the compressor and find out the voltage it's drawing?

You need an amprobe to measure current. Might be worth bying one, as it will confirm high current to the compressor.
