whirlpool freezer seems to quit periodically. Plugged unit in and it seems to work fine for a while then temp in freezer starts climbing and things defrost. Can hear unit running occasionally. Unit is 10-12 year old and is a traditional upper freezer, lower fridge unit

Check the compressor in the back and the condensing fan. Is the fan working and is the compressor very hot or cold?

Pulled out fridge and unplugged unit. Powered it up and turned it to highest cooling setting. Ran a while...fan blowing around compressor looks good and is working One copper line coming out of right side of compressor was warm to the touch and lines on left of the compressor were temperature neutral. Unit ran a couple of hours and freezer got down to 8 degrees...It appears to have quit and freezer temp is rising.

You probably have refrigeration problems. After running for a period, pull the backfreezer panel and check the frost pattern, total heavy frost is a defrost problem, partial light frost is a system problem, bad compressor/ refrigerant leak.
