Is the evaporator (freezer) fan running?
It should be on when ever the compressor and it's fan are on.

What is the actual freezer temperature?

As far as I know it only fills once so water pressure should not cause non solid cubes.

Low water pressure to the ice maker will cause hollow cubes.

Looks like hollow cubes could be due to low flow.

I took another look at the ice maker and it does fill from the far side away from the thermostat, so check that all the cube positions are filling with water.

I would try replacing the water filter.
