The defrost thermostat is located on the evaporator behind the back cover in the freezer. It's supposed to cut the heater off when the defrost temp reach around 32 degrees. And the compressor will come back on when the defrost cycle is complete in a certain length of time.
If it's not working it will sometimes appear bulged out. Also it will show continuity on an ohm meter at any temp. It should not show continuity when warm. Your adaptive defrost control is probably the problem if the defrost thermostat is not the problem.
