My Whirlpool refrigerator stops cooling until I turn them temperature knob to off wait a few seconds, then turn it back to normal cooling. It will then cool correctly for a few hours(or days in some cases). You can hear it seem to turn something off, then the compressor comes on when the knob turns to normal cooling.

Based on the information in your post,

My first inclination would be a loose connection, or a damaged contact in the defrost timer.

That's where I would start, if it were me.

You may want to test the cold control circuit, to eliminate that as a problem as well, while you've got the control panel down and can access both components.

Do you have a multi meter, so you can test circuits ?

Other things you may want to check is the thermostat itself.

Also when it stops cooling are the evaporator and the condenser fan off.
These are wired in parallel with the compressor, so if they are on the compressor should be on.
If it is not then perhaps your start relay is no good.
