Thanks! I actually got a response when I called Dacor technical support and acted like a repairman - they were very helpful even though I did not have an ID as an authorized repair facility. For anyone else who needs this info, the procedure is as follows: 1. set temp to 350 degrees. 2. press and hold "temp set" until display changes to show current setting of temperature offset, then release. 3. turn "time/temp" knob to display desired offset (must be between -35 and +35 degrees). 4. Push "clock set" to store new offset setting. 5. Push "temp set" twice, rapidly, to restore normal operation. It actually works, but the calibration process is long, since you have to wait 20 minutes or so to let the oven come to equilibrium, and then observe the entire cycling time of the heating element to find the average temperature in order to determine the proper offset. The oven can be calibrated to about +/- 2 degrees.

I cannot find any info on the given model number but that is not uncommon for a Dacor.
With luck someone else will jump in who has experience with this model.

If not perhaps the following will help.
Temperature testing starts on Page 36 and how to adjust it is on Page 38 but I do not know if this applies to your unit but is probably worth a try.

How do I adjust the thermostat on this wall oven? The temperature is about 12 degrees higher than it is set for.
