Sounds like you have a "secondary pilot" system.
The spark module clicks and lights the pilot,
The pilot thermo couple heats and activates the gas valve,
The thermostat controls the whole sytem.
My best educated guess at this point would be :
You have a bad thermocouple and bake burner valve.
When you open the oven door, you allow more air into the oven, and get a better fuel air mixture, and the flame and operation seem to work correctly.
We really need a model number to assist you further and better.

This close to Thanksgiving and NOW it wants to die ... arghhhh. HELP!!! My Caloric gas range (Heritage Series) (with electronic ignition) oven started acting funny recently.
