In order to get the temperature to 350 degrees, i have to set it at 515 degrees and it takes forever to get to 350. I use an oven thermometer to see what the temperature is. Although this is an older model, it has been used very little over the years. Could it just be a sensor or something like that??

Check the oven sensor. A good one will show 1100-1300 ohms, depending on the ambient temperature.
