Default Lincoln Impinger pizza oven loss of heat

Hi. Use 2 Lincoln Impingers. Model # 1240. Top deck has been losing temperature at random times. Usually runs at around 460. Unit will drop down to 325 or even low 200s. Only happens when bottom deck is on also. Was happening in the evening, but recently during mid-afternoon also. Blower stays on. Conveyor works fine also. Its happened when it's busy, and it's happened when it's slow (business wise). Unit has been cleaned thoroughly including component box. Had a service guy come out about a month ago and he didn't know what it was. And it was too costly to just start changing parts. The only way around it lately has been to turn it off and let it cool down from about 2p to around 4:30p. As long as I can basically before the dinner rush. It doesn't tend to have the issue when I do this. But still does occur once in a while. I would say that it tends to happen when it's a little warmer in the store, too. Not sure about that, though.

If anyone knows anything about these ovens, any info is greatly appreciated. Thanks

clean & reset igniter make sure burner blower is not overheating & temporarily siezing up
