We have a Magic Chef model 31203KAW, serial number 32446249UK. It takes upwards of 60 seconds to light and then, once started, will sometimes heat at temperatures wildly off the set value, sometimes reaching the set temperature and abruptly cooling off.

I believe it's about 6 years old.

I'm guessing you're going to say replace the igniter (or clean it), but how would we know if we also need to replace a temperture sensor, as well.

Is this possibly 2 problems?
