I have a Maytag Performa stove. The other day, I went to cook in it and after 2 hours it had only made it to 185 degrees (I had set it for 350). I went to a parts store and they told me it was the thermostat, but then wanted to charge me $250 for the part. But then he said something about a control, which makes me think he actually meant (and was charging me for) the control board. I didn't purchase any parts from him but started doing some investigating. The digital display on the face of the stove works, so I'm not sure if I should actually replace the thermostat (for a mere $26, or the control board with is $140 (I found it MUCH cheaper online).

It's more likely the temperature sensor. Remove the back panel and look for the two-wire connector attached to the temp. sensor. Follow the wires up to the control board and disconnect there. A good sensor will have 1100-1300 ohms at room temperature. Much higher, or much lower: replace it.

You may want to check that both elements are OK.

Bake and broil elements are used during pre-heat so if one of them is gone it will take a long time to heat up.

Thanks! Is there a way to check the elements? I know the bottom element is consealed. I ordered a new heat sensor and replaced that today, but that wasn't the the problem. After replacing the sensor we turned the oven on and tried to preheat to 350. After 1 hour is was only up to 190.

The elements can be checked with a meter.
Take a look at the manual for the resistance.
