I just replaced the ignitor in the oven and it worked, but the oven got to about 500 degrees and would not shut off. Could I have shorted the gas valve?

You need to check if the ignitor wires insulation is not damaged and bare wires not touching the cabinet. Then check the ignitor connector plug. If you have a multimeter then check the oven sensor resistance. At room temperature you should have about 1100 ohms. If all of this checks OK, then most likely it's a defective control board. It looks like this part is no longer available.
