I have this new part, however the old part has plastic connectors and the new part comes with ceramic wire connectors/nuts. Does anyone know if I should just cut the old wires and connect the new part using the connectors provided.

Yes, Cut the wires and use the ceramic wire nuts to attach the wires, Make sure you turn the power off tho the range, first.
