we have a wolf gourmet stove model as30ki-1

questions:

three of the burner igniters are broken off -- how to replace since they seem to be in pretty tight.
do they come up or go down.
is it ok for wires from new igniters to attach to existing wires via wire nuts.

one igniter seems to be in place but it does not light the burner when turned on.
i did not check to make sure the wire underneath is still connected.
are there any other causes for an igniter not to work.

also, we have a wire sticking out of one existing igniter hole and that one does seem to light one burner.
but all the igniters stay on for the duration of the cooking on the burner.
how to shut that off.
