oven takes over 10 min to start, when up to temp it does not hold that set temp, can drop 100 deg b4 starts heating again. This is a GE gas freestanding oven/range.

Your oven uses a 'hot surface' (glow ignitor) ignition system. On such a system observing what the oven ignitor is doing when the problem is occurring is usually the first step in narrowing down possible troublemakers.
