A friend gave me an old but serviceable oven to use in baking coatings onto metal parts. I have looked everywhere on it for a model number but can't find one. However, I suspect that all ovens are wired the same. This one has a shielded cable containing a white, a red, a black and a copper (ground) wire. Am I correct that ovens are hard-wired to 220V inside a box, rather than plugged onto an outlet; and that the connections are simply black to black, white to white, and so forth?

Yes, most are hard wired.
This sounds like a 4 wire hook up.
So unless someone has messed with it, it is red to red , black to black, white to white and bare copper to frame/ground.

Will depend on what is at the electrical box which may be 3 wire in which case the wiring is different.
