The analog clock on my double built-in ovens quit working so it was replaced with a digital clock panel. Now I can't get the self clean feature to work because the directions do not apply to the control panel I have now. The replacement has a "mode" button, the clock itself, an "up" button and a "down" button (for setting times etc.).

Any help would be appreciated!!!

You have to set the oven for self clean, using the Sector Switch and the Oven Thermostat for the desired oven. You have to use the digital clock to select the Start and Stop time only, the same way as you did before with the old analog clock. Whoever replaced the clock should leave you the user instructions.
