Replaced oven thermostat with part # AP2989685 but oven continues to heat to 450/500 no matter what you set the oven control temperature at.

When you replaced the thermostat, did you put the sensor arm, that mounts into the oven, in the same place? Also if you brake the sensor, it will over heat. The other thing to check is to pull off the knob, and turn it over and look at it some knobs can have a temperature adujment screw on them, if yours does make sure it is set at zero. If all this is OK. You have a bad thermostat. Take it back and get another. Tom
