Try to turn the orifice CW slowly to reduce the gas flow.

Generally, the knob can be removed and a very small flat-bladed screwdriver inserted in the hollow of the shaft. There is a set screw to adjust the flame. Turn on the oven, set it on the lowest setting. Remove the knob and adjust the flame by turning the screw; not too low, or it may extinguish with draft. Replace the knob and you're good to go.
