I replace the correct safety valve, ( I believe it had a slight leak) after install, the size of the oven flame is very large. Nothing else was replaced and the gas type was not changed. Thanks for any help.

Try to turn the orifice CW slowly to reduce the gas flow.
What is the complete model number of the oven?

Generally, the knob can be removed and a very small flat-bladed screwdriver inserted in the hollow of the shaft. There is a set screw to adjust the flame. Turn on the oven, set it on the lowest setting. Remove the knob and adjust the flame by turning the screw; not too low, or it may extinguish with draft. Replace the knob and you're good to go.
