Could be your oven sensor.
Here is a link with info on how to check it

Also depends what you mean by "real low".
You can usually adjust the temperature plus or minus 35 degrees. See your operators manual.

MY ADVICE IS TO CHECK THE OVEN THERMOSTAT WITH A TEST METER

I mean REAL low. It's like the thermostat is not properly operating. Is that hard to replace?

It's REAL low. It's as if the thermostat is not working either properly or at all. is that hard to replace?

NO ITS QUITE SIMPLE DISCONNECT FROM MAINS LOCATE THERMOSTAT (BEHIND KNOB AND ALSO SENSOR (INSIDE OVEN A LONG COPPER TUBE WITH WIRE GOING TO STAT) MAKE NOTES OF WIRE LOCATION (USUALLY TWO) THEN REPLACE IF IT IS A GAS OVEN THEN WONT BE ANY WIRES.
