The 8" burner likes to go red hot when it is turned on, no matter the setting (you can hear a small click occasionally when you turn it on). The 6" burner directly across from it on the right front does pretty much the opposite. It stays lukewarm (actually touchable) unless you turn the burner on to a "6" or higher setting. We are guessing we need new control switches, knobs, or something similar. Please help. Thank you in advance.

I would say the you require new infinite switches. Be sure to say what element it is for, to ensure you get the correct switch. On the one with low heat swap it with the other 6 inch to see if that position will now heat correctly. If not then odds are it is the switch. I would also check/clean the connectors on that element.
