We need to replace part AP3873511 and I want to make sure that it is something we can do ourselves. How difficult will this process be?

Andy,

It is a pretty involved process and procedure, but doable with time and patience.

How do you know you need the oven control assembly ?

Here's a copy of the service manual, so you can make an educated decission on wether you want to attempt the repair.
