There is nothing unusual about better heating performance in the convection bake compare to regular bake. The hot air will distribute more evenly during convection because of the convection fan.
If the difference between set and real temperatures in the oven is withing 35°F, then it can be adjusted. Follow the instructions in the attached mini-manual. Gene.

Thanks Gene. Don't think the issue is the difference between the set point and the actual temperature as much as the oven not holding the temperature. The problem seems to be intermittent so i think it was just coincidence that when I changed the oven to convection bake is worked fine. I checked the resistance at the temperature sensor at the control panel connection and it tests good at about 1080 ohms. As the oven is now working properly again, could it be the sensor is on the blink? Or the control panel?? Any further suggestions on further troubleshooting to try to pinpoint the problem? Many thanks!!

I don't think it's a good idea to guess what it could be as long as it's working fine. Let's see what will happen later.
Gene.

Thanks Gene. I certainly agree with you about guessing. That can be very frustrating and time consuming, not to mention expensive. Only problem is that the wife does not want to use the oven until I can assure her it is fixed for fear of ruining another dish. Help!!

You have to get a good and reliable oven thermometer. Place in the middle of the oven cavity. Set the oven on 350°F and run it for at least 30 minutes. Then open the oven door and check the temperature.
You can do it twice - on regular bake and on convection bake. Gene.
