Window AC Unit Issue

I have a small issue with a Whirlpool AC window unit which is used in my shop. The model number for the Whirlpool unit is ACQ184XMO. The unit was purchased in May 2003. As info: at the end of each summer, I have always removed the unit from the window to clean the coil & evaporator as preventive maintenance.
First, the unit cools very well when it is running, but for whatever reason, the unit doesn’t seem to run normally this year. Following is what I have discovered:
A- If I cut the thermostat down to the lowest setting (64), the unit will run and cool the shop very well. Only problem is if I’m not there to cut the unit off, the shop gets too cold. I would imagine the unit would cut itself off once the thermostat was satisfied or at 64 degrees, but that is too cold for me.
B- If I set the thermostat at 76 degrees, the unit now does one of two things:
1- 50% of the time the unit cools normally and cycles as one would expect
2- 50 % of the time the unit begins the normal cooling process and then generally within a 4 or 5 minute time period the unit will cycle off as if the temperature on the thermostat has been satisfied (but is has not been satisfied). Then, in less than a minute or two, the unit will once again power on. On this cycle, it appears only the fan blower is running as there is no cool air coming from the discharge vents. I have been switching the unit off at this point.
What is causing this issue? In my mind it could be only one of two things: Electronic control thermostat assembly or the small temperature sensor mounted on the evaporator intake. Am I close and if so, which one? The temperature sensor is very reasonable priced. Any help will be greatly appreciated!
