My dryer does not keep running after I let go of the the starter switch. I saw that people were having the same problem with electric dryers. It seems that the most common culprit is the "idler spring switch."
Would it be the same thing with a gas one? Or am I having a problem with another part?

Odds are that it is your problem.
Trouble is GE likes to keep everything a secret so I cannot get a wiring diagram for this unit.

Below is an example of how GE ofter wires a unit

It shows that the belt switch is in the parallel circuit path for the start switch so it is probably the culprit. Next would be the centrifugal switch on the motor.
One side disconnects the start winding and the other side switches in the parallel circuit path for the motor's run winding.
