Can you provide a model number of your unit (usually labeled on inside right edge of door)? One problem Bosch had on older units or units that have been in service for years is the impeller on the circulation motor fails. That particular problem results in the symptom you describe. You can run a diagnostics to get an error message. I may be able to provide you with more precise instruction on running diagnostics after you provide the model number.

Just reread your original post and realized you said it doesn't do it in the rinse and hold cycle. That sounds like you have verified the water is circulating. If water is circulating normally then it would not be an impeller problem and likely points to something in the heater circuit having failed. These units have a flow switch in the heater circuit so either an impeller failure or a component in the heater circuit would cause the unit to run endlessly (because the water doesn't heat up). The rinse and hold will operate complete because that cycle doesn't call on the heater circuit to operate. When you run rinse and hold can you hear the spray arms operating or see them coming to a stop as you open the door during that cycle?
