We have an elderly Magic Chef DU60AA-01 under-counter dishwasher whose door just falls open, like the door spring is broken. Is it easy to check if the spring is, in fact, broken?

And if it is broken, is WD1X1354 (AP2038347) (it seems to be recommended in your replacement parts pages) a good replacement?

Yes just remove the kick plate and you should see what is broken.
More likely that the cable assembly is broken than a spring.

I am not sure about the replacement spring. It is best to talk to a parts representative about this.
Also you could visually compare the spring with the replacement.
The grach on the parts picture is 1 inch per square.
